Technology: Will Robots Replace Food Workers?

CNBC (January 10, 2023) – This robot named Flippy runs the fry station at a White Castle outside of Chicago. With a mechanical arm and using computer vision technology Flippy can cook everything from french fries and onion rings to cheese sticks. White Castle said it plans to add 100 Flippy’s to its kitchens’ nationwide.

Up to 82% of restaurant positions could, to some extent, be replaced by robots. Automation could save U.S. fast food restaurants over $12 billion in annual wages. And restaurants are also struggling to find workers.

American restaurants are down more than 560,000 jobs or about 4.6% of its workforce from their pre-pandemic levels. So what impact will robots have on the fast food industry and the livelihood of its workers? CNBC got a behind the scenes look at restaurant robot maker Miso Robotics to find out.

Cannes View: La Palme d’Or Chef Christian Sinicropi’s Brilliant Ceramic Dishes

Set right on the spectacular coast of Cannes, France, La Palme d’Or rests inside the Grand Hyatt Cannes Hotel Martinez. This restaurant has won two Michelin stars, and is most known for its Mediterranean-style dishes. However, the most notable thing about this restaurant is the head chef, who creates bespoke ceramic dishware to for the restaurant to best compliment his unique recipes.

Some places you fall in love with at first sight and La Palme d’Or is one of them. In the fabulous Art Deco setting of the Hotel Martinez, diners look down on the famous promenade of La Croisette and the Bay of Cannes, while savouring the luxury and refinement so beautifully brought together here. Of course, all this would be worth nothing without high-calibre cuisine. No worries on that score: chef Christian Sinicropi, a local man, has matters entirely in hand. At each stage of the “Mouvements” set menu, he homes in on one ingredient, supporting it with elements from its own ecosystem. The result is coherent and sophisticated, right down to the remarkably precise desserts by Julien Ochando. Definitely worthy of a Golden Palm award.

Food & Wine Restaurant of the Year 2022: Locust, Nashville

Locust in Nashville is the most perfect restaurant for our time.

Locust is open three days a week, for five and a half hours a day. Two hours are dedicated to lunch; the remaining time is for dinner service. On average, there are about six dishes on the menu, plus the occasional special (or three). The wine list is just as short. It’s hard to define what exactly the restaurant is, but as of right now, the food mostly has a Japanese bent. And on any given night, there might be a heavy metal soundtrack blasting from the open kitchen, with a few chefs head-banging away as they prepare your next dish. Locust is fully, uncompromisingly, and unapologetically itself—which is exactly what makes it so playful and brilliant.

City Scenes: 48 Hours Of Tasting Lisbon, Portugal

Lisbon is Portugal’s hilly, coastal capital city. From imposing São Jorge Castle, the view encompasses the old city’s pastel-colored buildings, Tagus Estuary and Ponte 25 de Abril suspension bridge. Nearby, the National Azulejo Museum displays 5 centuries of decorative ceramic tiles. Just outside Lisbon is a string of Atlantic beaches, from Cascais to Estoril. 

In order of appearance we featured: 1. Tapisco – £££ – for Spanish-Portuguese fusion small-plates 2. Bonjardim – £ – for proper authentic Portuguese piri chicken 3. Senhor Uva – ££ -lovely little casual natural wine bar 4. Clube de Journalistas – ££ – out of the centre, but so worth it 5. Neighbourhood – ££ – for great coffee and brunch but also for any time of day 6. Manteigaria – £ – pastel de natas babbbyyyy 7. Taberna in Bairro Do Avillez – ££ – huge building with 4 restaurants inside. 8. Taberna was the one we tried and it was great 9. Taberna Sal Grosso – £ – unreal 10. Prado – £££ – proper seasonal, farm to table joint 11. Monkey Mash – ££ – awesome speakeasy bar 12. Red Frog – ££ – 10/10 cocktails 13. The Folks – ££ – for speciality coffee and great pancakes 14. O Velho Eurico – £ – Portuguese dishes with a twist 15. Omakase Ri – £££ – tiny sushi bar with no menu, chef’s choice 16. Musa – ££ – local craft brewery. 17. Tricky’s – ££ – proper vibe and great food

Views: Ancient Food In Merzouga, Morocco

Ancient food in the Merzouga Region of Morocco. Merzouga is a small Moroccan town in the Sahara Desert, near the Algerian border. It’s known as a gateway to Erg Chebbi, a huge expanse of sand dunes north of town. West of Merzouga, Dayet Srji is a seasonal salt lake that’s often dry in summer. When full, it attracts a wide range of migratory and desert birds, including desert warblers, Egyptian nightjars and, occasionally, flamingos.

Restaurants: Dar Aytma Restaurant and Dar Gnaoua Bambara.

Food: Sourcing Local Fish In Southwest England

The war in Ukraine has hit the supply of grains and vegetable oils, while around 70% of the world’s cod and haddock comes from Russian boats. Global food prices are soaring and some restaurateurs fear a plate of cod and chips could rise to £20. The FT’s Daniel Garrahan and food writer and restaurateur Tim Hayward travel to England’s south west coast to see how two restaurants which source local, sustainable fish are coping with inflationary pressures.
